Super Bowl BLACK BEAN & MANGO SALSA

So we are all gearing up for the biggest football game in our country, the Super Bowl.  The Super Bowl is a great time for family and friends to get together share some pints, food and watch America’s Sport.  Even if you have a significant other that doesn’t like to watch Football, they will watch the Super Bowl just to watch the commercial.  Let’s be honest, they are some of the funniest commercials ever.

For this years Super Bowl Chef JC has decided to share his Black Bean & Mango Salsa.  This was Chef JC’s hottest selling items when he toured the Farmers Markets with his products.  So, without further delay, here it is.

1-15.5 OZ. Can Of Black Beans, Drained and RinsedSALSA PROCEDURE:
1-4 Oz. Can Of DICED Roasted Red Peppers, Drained but NOT rinsed
1/4 Bu. Fresh Cilantro, Finely Chopped
4 Oz. Red Onion, Small Dice, 1/4 ” (APPROX. ½ R.ONION, MEDIUM SIZE.)
8 Oz. Frozen Mango, Small Dice, 1/4″
8 Oz. Cumin-Jalapeno Dressing (SEE RECIPE BELOW)
6 oz. Frozen Corn, Blistered, See Procedure!

SALSA PROCEDURE:

  1. Preheat Oven @ 500F, Place Defrosted Corn on a mixing bowl and Line w/ Salt to taste and olive Oil to Coat Kernel…Cook for 8Min. on a sheet pan/flat. Cool and Reserve…
  2. Drain and Rinse Canned Black Beans, till no starch is present! (Using a colander…)
  3. Drain Roasted Red Peppers, and add to Beans, Mango, Cilantro,

CUMIN-JALAPENO DRESING (FOR SALSA)
4 Oz. Veg Oil
2.5 Oz. Hot Wing Sauce, Pete’s Brand
1 EA. MEDIUM Jalapeño
.15 Oz. Ground Black Pepper
1 Oz. Light-Brown Sugar
.5 Oz. Kosher Salt
.25 Oz. Ground Cumin Powder

PROCEDURE: Place all Ingredients in Blender and mix on High Speed for 40-60 Sec. BOOM!
